For completeness I'm adding one last detail to this wheel & tire upgrade: I bought 5 rims and 5 tires so I have a spare that's the same as the other 4 wheels and tires. Today I finally got around to dropping the original spare and put my new one in, and the 255/75r17 tire fits just fine where the stock one was.

I was scanning the Method site and came across an alternative wheel for the 255/75/17 tires: Method 316 17x8 +25mm. They would poke a bit more than the 703 +35mm, but the wheel is 0.5" narrower which might be a better fit for the tire.

I like those wheels a lot and wanted to get them for my Raptor. I just thought +35 might not be wide enough and I never saw any pics of those wheels on a Raptor to find out.
here is +35 with stock tires on raptor hope it helps

I pulled the trigger today on ordering a similar setup: Cooper 255/75/17 on-road Discovery AT tires (I don't need LT spec tires) and Method Gloss Titanium 316 17x8 +25mm wheels. All sourced from TireRack. Should be a good interim setup until the warranty expires, lol.

Share some photos and your thoughts on the tires when you get a chance; sounds like a great setup!

I will; they are two weeks or so out as the wheels are in transit from somewhere, lol.

Here's a quick pic of my truck with the Method 316 17x8 + 25mm and Cooper 255/75/17s. Sorry it's a bit dusty.

Nice! From this angle the +25 looks like there’s a lot more poke than my +35’s (same tire size). Looks great.

Here's another view; I'd agree that there is a slight poke but weird that I don't mind it as I generally don't like poke. I was pleasantly surprised that the wheel color is in the same palette as the rest of the truck.

Full frontal doesn't show poke at all, but I think there's a little bit of distortion in the shot.

You can see the slight poke better in this view. The contact surface of the tread is contained within the fender well but the sidewall pokes just a bit

Yea I think the poke in the first shot might have been exaggerated from the camera because these photos don’t look significantly different than mine.
Did you replace your spare or keep the original?
